A while ago I was doing some grocery shopping at Publix and I saw some really interesting Tollhouse espresso baking chips. I grabbed a bag and figured I could find something to use them for. I decided today was the day and I was going to make cookies with them–swapping them in for regular chocolate chips. I also halved the recipe that I found online and it still made just over 15 cookies.
Ingredients:
- 1/2 stick of butter, softened
- 1/3 cup white sugar
- 1/3 cup brown sugar, packed
- 1 tsp vanilla
- 1 egg
- 1/2 tsp salt
- 1 cup all purpose flour
- 1/2-1 cup toll house espresso baking chips
Preheat oven to 375 and cover baking sheet with a piece of parchment paper.
Beat together butter and sugars. Once combined add in vanilla and egg and mix well. Add in salt and about 1/2 the flour. Once mixed add in the remaining flour. Mix to combine, but do not overmix. Fold in the morsels. Drop teaspoonful amounts onto the parchment lined baking sheet and bake for 9 minutes.
These cookies are thin, perfectly crunchy along the edges and the right amount of chewy in the middle.
